The Upgraded Sugar Cookie

I don't like sugar cookies.. Wasn't impressed with them as a kid either...boring, bland, blah blah blah. This recipe is not that same old boring dry cookie with crusty stale sugar sprinkles. It's the first cookie I sell out of at every event. Maybe its the white chocolate chips or maybe its the brown sugar. Whatever, this cookie brings life to the party and the mouth! Confetti Sprinkle Sugar Cookies

I love measuring my ingredients with a scale. It s so much more precise and precision gives you more consistent results.


Makes approx. 14 thick 3" cookies


Combine

230g Cold Butter 9 (small cubes and cold)

100g White Sugar

160g Soft Light Brown Sugar

400g White Chocolate Chips


Combine

400g Plain Flour

100g Self Raising Flour

1tsp Salt

2tsp Baking Powder

90g Confetti

20g Sprinkles (optional for dipping/rolling)


Last

2 Whole Eggs + 1 Egg Yolk -slightly beaten and pre mixed with vanilla

1/2 tsp Vanilla Extract


Freeze at 2 hours, 6 is even better.

In a large bowl, whisk flours #baking powder, and salt. Set aside. With an electric mixer, mix, do not cream cold cubed butter, chips and sugar until light and lumpy. We want to keep the mix grainy and dry until the very end. With mixer on low, gradually add flour mixture; beat until combined. Now, add in your eggs mixture last in 2 parts. The eggs are moistening and pulling the #dough together while keeping the chips and #butter chunks intact. Mix about 45 seconds or until dough has formed into 1 mass blob. Now get out your ice scream scoop or other tool to make balls with. Use your scale again to make sure all your balls are approximately the same size. Wrap ball in plastic; freeze until firm, at least 2 hours.


  • Preheat oven and baking sheet to 355 degree. Arrange cookies on baking sheet at least 3 inches apart so cookies can spread and puff a little. Bake at least 15 minutes or until golden on the edges, Voila!! These cookies are fresh with no preservatives, so consume with 4 days unless your are freezing them which then they will last 2 months.
